牛在十二生肖中是体积最大的，与老鼠成对比，所以多以“鼠”喻小或少，以“牛”喻多或大，如说大材小用为“杀鸡焉用牛刀”。
牛体大，毛自然多，因此以“牛毛”喻众多而细密，杜甫有“秦时任商鞅，法令如牛毛”的词句，是古代法令繁苛的具体描写。
在古时，除祭孔子用牛，在国与国彼此会盟时亦须祭
牛，只有主盟国的人才有“执牛耳”的资格和机会，因此，“执牛耳”遂成为“权威”的象征名词了。
一头硕大水牛，怎样驱使它去耕田？自古以来，都是刺穿它的鼻子，系上鼻环，用绳子牵着鼻环，牛因鼻痛，乖乖地听人使唤。因此俗语说，“牵牛要牵牛鼻子”，即办事情要抓要害。
牛胃有四个囊，食量很大，因此世人讥笑食量大的为“牛肚”，称人善饮曰“牛饮”，脾气大作“牛脾气”。夸耀不实为“吹牛”或“吹牛皮”。称投机取巧的不法分子为“黄牛”。凡事情两不符合为“风马牛不相及”，或“牛头不对马嘴”。牛被讥愚笨，所以不明话意为“对牛弹琴”，报恩则称“做牛做马”。
如今，人们还把竭诚为民的好干部称为“老黄牛”，把勇于创新的精英褒扬为“拓荒牛”，我们更不会忘记鲁迅先生的名句：“俯首甘为孺子牛”。
